After a long day yesterday I needed a quick dinner. With work, personal training and a wrestling meet, we didn’t get home until 8:30pm. Tuesday’s are crazy. My original plan was to make chicken tortilla soup in the crock pot so when we got home, it was time to eat. Unfortunately I thought I had black beans but it was actually black refried beans. Super yummy BTW.
So plan B, egg roll in a bowl. This is a super quick, tasty recipe. This is not my original recipe nor do I take any credit in its creation. Original recipe below by Tip Hero.

It’s simply cook ground sausage. I used Italian because it is what I had on hand.
Cook thoroughly. When done. Add cole slaw mix and mix thoroughly.
Add sauce and cook f or about 5 min until cabbage is wilty but still a little crunchy.
Serve and eat.
On a side note: next time I may reduce the amount of soy sauce. It was a little saucy for me. I used low sodium soy sauce and still tasted a bit salty for me. My hubby loved it just the way it is. So we shall see if he likes it as well with less sauce.
I divided this into 4 servings and it was a decent amount of food for a meal. It was the entire meal for the evening.
