Snickerdoodle Truffles

Snickerdoodles are one of my hubby’s favorite cookies. That and peanut butter. I like chocolate so I have lots of chocolate recipes. But I needed to find something for him. Something special.

Hello Snickerdoodle Truffles. These are a no bake dessert that are very simple to make.

This is not an original recipe of my creation. I found this on pintrest. I like alot of the recipes I find on All Day I Dream About Food‘s blog. That, and I really like their name. Sometimes, I dream about my upcoming dinner during the day. Like today, it’s Chili lime Fajitas with 3-ingredient low car tortillas. If it is as good as it sounds, I will post soon.

This recipe is simple. Place ingredients in a bowl.

Mix together. Add melted butter and stir to combine.

A dough will form. This may still be a little crumbly. No worries, when you press them together into balls, they stay together.

I used a cookie scoop to measure the balls. I pressed them with my hands and placed on a silpat mat.

Next I mixed the topping of cinnamon and sweetener.

Roll each ball in the coating.

Once each ball is coated, I placed in the refrigerator to firm up.


Snickerdoodle Truffles
2 cups almond our
1/2 cup Swerve, Confectioners
1 tsp cream of tartar
1 tsp ground cinnamon
1/4 tsp salt
6 tbsp butter, melted
1 tsp vanilla extract
3 tbsp Swerve, Granular
1 tsp ground cinnamon
1. In a large bowl, whisk together the almond flour,Swerve (sweetener), cream of tartar, cinnamon, and salt. Stir in melted butter and vanilla extract until the dough comes together. If the dough is too crumbly to squeeze together, add a
tablespoon of water and stir together. 2. Scoop dough out by the rounded tablespoon
and squeeze in your palm a few times to help it hold together, then roll into a ball.
Place on a waxed paper lined cookie sheet and repeat with remaining dough.
1. In a shallow bowl, whisk together the
Swerve and the cinnamon. Roll the truffles in the coating until well covered.
Makes about 24 trues.
2 truffles Per serving.
